It's summer, and tomatoes are ripening. Sometimes too many ripen at once, and neighbors who grow them appear at your door with luscious red gifts. What to do with them? Here's one of our favorites which also uses chard and basil from our own garden.

Ingredients

• Bread (we use 100% stone ground wheat)
• Garden Tomatoes
• Fresh Chard
• Fresh Basil
• Sliced Cheddar Cheese (we use fat free)
• Thin Sliced Canadian Bacon
• Mayonnaise (we use Cain's All Natural)
• Brown Mustard (Guldens)
• Minced Garlic
• Smart Balance Organic Buttery Spread
• Olive Oil, Salt, Fresh Ground Pepper

Prepare and set aside:

• Saute a large handful of chard on medium heat in a covered Teflon fry pan with olive oil and a pinch of minced garlic until it shrinks down dramatically. Add salt and pepper to taste.
• Lightly sear Canadian Bacon in another fry pan with 1/4 tsp. Smart Balance Spread.
• Cut tomato slices appropriate for sandwich. Add chopped basil to tomato slices and salt to taste.

Now build sandwich:

• Coat one slice of bread with light spread of mayonnaise and mustard. Put one slice of cheese on the bread, nuke in microwave 30 seconds or so to melt cheese.
• Add another layer of mayonnaise and mustard on top of cheese.
• Add the seared Canadian Bacon.
• Add sauted chard.
• Add tomato slices.
• Coat other slice of bread with mayo (no mustard on this side) and cover sandwich.
